I’ve been making versions of Daniel Boulud’s gazpacho for almost 20 years. Over time I’ve streamlined the steps, but I still blanch the bell peppers to lessen their sharp bite. This recipe makes a creamy red soup, flecked with basil. Adapted from Café Boulud Cookbook

Tiny white chocolate chips add a creamy sweetness to Elmwood Inn’s Southern Pecan Black Tea.  I add a touch of maple syrup to this Tea Toddy, which pairs well with the caramel notes of Kentucky Bourbon.

Ginger Water

More than a recipe, this is a method.  Use a little less or a little more ginger, more or less water.  You could also boil the water and ginger on the stove top for a stronger ginger flavor.  I leave the pitcher of ginger water on the counter during the day and put it in the fridge overnight.

Sparkling Apple Spice Tea Cocktail

Virtually all the flavor in this cocktail comes from the Apple Spice Tea Syrup, which is made in advance and cooled.  Use the freshest tea you can find from a tea purveyor you trust.  I use Elmwood Inn’s Apple Spice Black Tea, a Sri Lankan tea with a warm apple flavor profile.
